Mint-Grapefruit Gin Cooler

So now that we all know that I am a bit of a lush, I can freely admit that I am a bit of a master mixologist (in my own home, anyway). The other night was brutally hot and humid, and looking for a bit of relief, I of course turned to the liquor shelf in search of a refreshing cocktail.

I’m not going to try to claim or prove that this has never been made before, but as a gin-a-holic that always orders the crazy gin drink on the menu, I have never had anything like this. It was pretty darn perfect, so of course I have to share with you.

I also won't apologize for the lack of exact measurements here; in my opinion, eyeballing it always makes the drink better (and stronger, duh). Also, everyone has a very different tolerance level for the taste of gin, so going lighter on it (while I can’t recommend that route…) might make it more your cup of tea (or gin, as it were).

2 parts gin (Hendricks, always)
1 part tonic water
1 handful-ish of fresh mint leaves, plus sprig for garnish
½ ruby red grapefruit, sectioned
Ice

Add gin and tonic water to a shaker with a little bit of ice. Add mint leaves and muddle to preference. Shake vigorously and pour into desired glass. Add grapefruit segments plus leftover juice from the skin, and top off with additional ice and a sprig of mint (don’t skip this, the aroma makes it even more refreshing as you drink!).

Enjoy...vigorously.  (al fresco, of course)!

What are your favorite summertime cocktails?
